An Easy And Delicious Chocolate Chip Cookie Recipe For The Special Needs Mom

 

As a special needs Mom I don’t get a lot of time to bake but when I do I love to bake cookies! Chocolate chip cookies are a family favorite and my go to for any occasion! Seriously, if you invite me to a BBQ, a girl’s night, or a picnic I’m showing up with these chocolate chip cookies! I also love these for a school event such as a bake sale or to bring to an IEP meeting. 

This chocolate chip cookie recipe uses simple ingredients everyone has in their pantry. The dough can be made in under 15 minutes and the cookies take about 8 minutes to cook. Perfect for a busy special needs Mom! 

Plus these cookies are crispy on the outside with ooey-gooey goodness in the center!  YUM!

I’m also going to share a couple tips to bring these chocolate chip cookies to the next level!

Easy and delicious chocolate chip cookies for your next IEP meeting!

Easy And Delicious Chocolate Chip Cookie Recipe

  • 1 cup crisco

  • ¾ cup brown sugar

  • ¾ cup sugar

  • 2 eggs

  • 1 tsp salt

  • 1 tsp baking soda

  • 1 tsp vanilla

  • 2 ¼ cup white flour

  • 2 cups semi-sweet chocolate chips

375 degrees until edges brown–about 8 minutes

All the ingredients you’ll need for delicious chocolate chip cookies! Simple ingredients most of us have in our pantry!

Easy And Delicious Chocolate Chip Cookie Instructions

Preheat the oven to 375 degrees.

Cream together the crisco, brown sugar, sugar, and vanilla. 

Next, add the eggs and mix. 

Brown sugar, sugar, crisco (I heat it up), vanilla, and eggs. Mix it all up!

Now you’re ready for the dry ingredients. Add the salt, baking soda, and white flour and mix. 

Finally add the chocolate chips. 

Take a greased baking sheet and place a ball of cookie dough on it. I use a spoon, some people use a cookie scoop. It’s like an ice cream scoop but for cookie dough!

Place a few chocolate chips on top of each cookie dough ball to make it pretty!

Chocolate Chip Cookie Tip #1: To make those cookies look extra delicious and picture worthy, place a few chocolate chips on the top of the ball of dough.

Place cookies in the oven at 375 degrees for about 8 minutes. That time varies depending on your oven. Look for the edges to be golden brown and a bit crispy but the middle will still look a little wet. 

Chocolate Chip Cookie Tip #2: Immediately after taking the cookies out, sprinkle just a little kosher or sea salt on the tops. Salty and sweet goodness! 

Add a pinch of salt immediately after taking the cookies out of the oven. Sweet, salty, and super YUMMY!

Let cookies cool on the  baking sheet for 3-5 minutes and then transfer cookies to a cooling rack. 

How To Keep Chocolate Chip Cookies Fresh

There’s no way around the fact that cookies are best when they are fresh! These cookies are no exception.

If you need to keep already baked cookies fresh you can put a tortilla in an airtight container with them. At room temperature the cookies should last about 5 days. And if you love a warm chocolate chip cookie then use a toaster oven to heat a cookie up before eating it!

As a super busy special needs Mom I totally get that sometimes you need to whip up something to bring or serve right away. Rather than going to the supermarket I would suggest keeping pre-scooped balls of chocolate chip cookie dough in a resealable bag in your freezer. That way you can bake chocolate chip cookies and serve them in a matter of minutes!

Yep, that’s right, you’re a superstar!

This cookie recipe is perfect for any occasion because it uses simple ingredients you have in your pantry, it’s easy, and quick to make! Not only that but fresh homemade chocolate chip cookies are a crowd pleaser on any day! 

These cookies are perfect to bring to an IEP meeting, a thank you gift for a teacher or school staff, a class treat, a school bake sale, a BBQ, a picnic, a party, or to celebrate a special occasion. I often make these as a special treat for the kids to come home to after their first day of school. 

A platter full chocolate chip cookies…yes please!

You can also swap out the semi-sweet chocolate chips for something else to give them a different kind of vibe. You could mix in mint chocolate chips or chopped Andes candies during the holidays. White chocolate chips with dried cranberries would also give me a holiday vibe. If you have a peanut butter lover in the family, substitute Reese’s pieces. 

You can also add things to up your chocolate chip cookie game such as pretzel pieces and nuts. 

There are so many options!
